Vegan Banana Bread Muffins

  • 2 cups all purpose flour (probably works fine with a gluten-free substitute)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups banana, mashed
  • 1/2 cup coconut oil
  • 1 cup coconut sugar
  • 1 tbsp vanilla extract
  • 1/4 cup soy yogurt
  • 1 tsp apple cider vinegar


  • Preheat the oven to 350 degrees
  • Lightly oil the muffin tin
  • Sift the flour, baking soda and salt, and set aside
  • Mash the banana in a bowl with a fork, then add the oil, sugar, vanilla, yogurt and vinegar
  • Mix until the chunks of banana are almost gone
  • Combine with the dry ingredients and continue mixing until the dough is blended. It's fine if it's a bit chunky still
  • Fill the muffin tins about 3/4 full
  • Bake 30-40 minutes, until a toothpick or knife comes out clean
