Roast Whole Duck

Good basic recipe. Recommended accompaniments: Creamy Morels and Condiments de Figue

Ingredients

  • 1 whole duck, thawed if needed
  • butter
  • salt (about ½ tsp per pound of meat
  • rosemary sprigs
  • 1 tbsp dried sage
  • 1 tsp ground coriander or crushed whole coriander
  • ½ onion, chopped
  • ground black pepper to taste

Preparation

Remove skin from duck. Rub with butter and spice mixture. Stuff cavity with onions, bay leaf, and also neck/gizzard if included. Bake at 375 for 1-2 hours - cover with aluminum foil after top has browned. Periodically spoon butter and drippings onto breast. Can also bake at 450 to brown for 15+ minutes, then cover with foil and reduce heat to 375 to cook through.
