Quinoa Fiesta

An experiment made on 12/3/08


  • 2 cups Quinoa
  • 1 can of black beans
  • 1 can of olives, chopped
  • 1 tomato, chopped
  • 1 tsp cumin, oregano, chili powder
  • 1/4 cup chopped cilantro


  • 2 tsp grated lime zest
  • 2 oz lime juice (or juice from 1 lime)
  • 2 tbsp olive oil
  • 2 oz habañero-infused tequila
  • dash of salt and pepper


  • In a large saucepot, bring 4 cups of water to a boil
  • Rinse the black beans in a sieve
  • Add Quinoa, and boil on medium heat
  • When most of the water is gone, add the black beans, tomato, olives and spices (except cilantro)
  • Continue cooking until all the water is absorbed
  • Mix the sauce ingredients in a pyrex cup measure or small bowl
  • When the quinoa is mostly dry, transfer to a large mixing bowl
  • Mix together with the sauce and cilantro
