Pie Crust (Vegan)

  • 3/4 c white rice flour
  • ½ cup tapioca starch
  • ½ c potato starch
  • ¼ c cashew flour
  • ½ tsp sea salt
  • ¼ tsp xanthan gum
  • ¼ c canola or other vegetable oil
  • ¼ c virgin organic coconut oil
  • 6-8 tbsp cold water


Preheat oven to 350. Add all dry ingredients to a small mixing bowl and stir to combine. Use a food processor or a fork to cut oils into the flour until the mixture resembles crumbs. Stir in just enough water for dough to come together. Press into pie dish or casserole pan and bake for 20 minutes.


This crust was a little tough and chewy. Things to try: more fat and less water, rolling out dough to try to give it layers, shorter cooking time, more protein in dough (from milk or other flours). The taste is quite nice, however.
