Oatmeal Raisin Cookies

  • 1 cup oats
  • 1/2 cup Bob's gluten-free all-purpose flour
  • 1/2 cup date sugar
  • 1/2 cup raisins
  • 1/4 cup butter, melted
  • 2 eggs
  • 1/4 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract

Preheat oven to 350 degrees.

In a large bowl, beat the egg, then mix in the butter, and sugar. Then gradually add the dry ingredients except the oats while mixing. Last, add the oats and raisins.

Roll into tablespoon-sized balls and place on ungreased cookie sheets.

Bake 8-10 minutes in the preheated oven. Remove from cookie sheet to a wire rack and let cool completely.


Notes:

Need to find a way to make them more chewy and less dense.
