Hummus From Scratch

Description

This is the cheapest way to make vast quantities of hummus for all you hummus lovers out there! Thanks to http://hummus101.com for great insight and guidance.

Ingredients

  • 2 cups dry chickpeas
  • ~ 1 tbsp baking soda
  • ½ cup fresh sesame seeds + ¼ c tahini
  • ½ cup olive oil
  • 1 lemon (juice and zest)
  • ~7 garlic cloves
  • cumin and salt, to taste

Preparation

Rinse chickpeas until water runs clear; soak with baking soda for 4+ hours (in warm water, or overnight in cold). Rinse again and soak without soda for about 2 hours, then cook in slow cooker on high for 2 hours with a little soda. Blend sesame, olive oil, lemon juice and zest, garlic and any water needed to make mixture smooth. Add chickpeas and spices and blend.
