This is the cheapest way to make vast quantities of hummus for all you hummus lovers out there! Thanks to http://hummus101.com for great insight and guidance.
- 2 cups dry chickpeas
- ~ 1 tbsp baking soda
- ½ cup fresh sesame seeds + ¼ c tahini
- ½ cup olive oil
- 1 lemon (juice and zest)
- ~7 garlic cloves
- cumin and salt, to taste
Rinse chickpeas until water runs clear; soak with baking soda for 4+ hours (in warm water, or overnight in cold). Rinse again and soak without soda for about 2 hours, then cook in slow cooker on high for 2 hours with a little soda. Blend sesame, olive oil, lemon juice and zest, garlic and any water needed to make mixture smooth. Add chickpeas and spices and blend.
Using baking soda to cook the chickpeas really helps the flavor and texture.
