  • 1 egg
  • 2 tablespoons orange juice
  • 1⁄2 teaspoon orange zest
  • 1 teaspoon vanilla
  • 1 1⁄2 teaspoons xanthan gum
  • 1/4 cup? tapioca starch
  • 2 1⁄2 cups King Arthur baking mix (gluten-free)
  • 1⁄4 cup? (maybe 1/2) potato starch
  • 1/4 cup whole milk plain yogurt

Italian Fig Cookie Filling

  • 10 oz Smyrna figs, stems removed
  • 1/2 cup pitted dates
  • juice of 1/2 orange
  • 1 tsp orange zest
  • 1 oz Gran Gala
  • 1/4 tsp salt
  • 2-4 tablespoons brown sugar
  • 1/2 cup almond flour
  • cinnamon, cloves, nutmeg
  • hot water

Indian Date-Coconut filling

  • 1/2 cup pitted dates
  • 1 cup shredded dried coconut
  • seeds of 2 cardamom pods
  • dash of salt
