Italian Fig Cookie Filling
- 10 oz Smyrna figs, stems removed
- 1/2 cup pitted dates
- juice of 1/2 orange
- 1 tsp orange zest
- 1 oz Gran Gala
- 1/4 tsp salt
- 2-4 tablespoons brown sugar
- 1/2 cup almond flour
- cinnamon, cloves, nutmeg
- hot water
Indian Date-Coconut filling
- 1/2 cup pitted dates
- 1 cup shredded dried coconut
- seeds of 2 cardamom pods
- dash of salt
