Gluten Free Zucchini Bread

Ingredients

  • 3 eggs
  • 1/3 cup unsweetened apple sauce
  • 1/4 cup canola oil
  • 2 cups grated zucchini (about 2 medium zucchini)
  • 3/4 cup almond meal
  • 3/4 cup tapioca flour
  • 3/4 cup white rice flour
  • 1 tbsp xantham gum
  • 2 tbsp agave syrup
  • 1 tsp baking soda
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

tweaks to ingredients

  • 4 eggs
  • 1/2 cup unsweetened apple sauce
  • 1 cup almond meal
  • 1 cup white rice flour
  • 1 cup tapioca flour
  • 1 tbsp xanthum gum
  • 2 tbsp agave syrup
  • 1 tsp baking soda
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tsp cloves
  • 1 tsp vanilla

Preparation

  • Preheat the oven to 350°
  • In a large bowl, beat (by hand or with a mixer) the eggs, apple sauce, oil, agave syrup, zucchini, adding ingredients in that order.
  • Add the rest of the ingredients and mix until smooth
  • Butter a 5x9" bread pan and pour into the pans, make sure not to fill over half way
  • Bake about an hour, or until a knife comes out clean
