Cauliflower-Broccoli Bake

Ingredients

  • 1 lb cauliflower
  • 1 lb broccoli
  • 1½ lb potatoes, cut into cubes


Sauce

  • 2 tbsp butter
  • 1 leek, sliced
  • 1 garlic clove, crushed
  • 3 tbsp corn starch
  • 1½ cups milk
  • 1 cup grated cheese
  • ½ tsp paprika
  • 2 tbsp chopped parsley
  • salt & pepper

Preparation

  • Preheat oven to 350°F
  • Bring a large pot of salted water to a boil, and boil the cauliflower, broccoli and potatoes for 10 minutes. Drain the vegetables after cooking.
  • Melt the butter in a large pan
  • Add the leek and garlic and cook over low heat for 1 minute
  • Stir in the corn starch and cook, stirring constantly for 1 minute
  • Remove from heat and gradually stir in the milk, 1/2 cup cheese, and paprika
  • Return to heat and bring to a boil, stirring constantly
  • Season to taste with salt & pepper
  • Place the vegetables in the baking dish, and pour the sauce over the top
  • Sprinkle over the remaining cheese
  • Cook for 20 minutes, or until the cheese is golden brown and bubbling
  • Garnish with chopped parsley
