Cauliflower-Broccoli Bake

Ingredients
- 1 lb cauliflower
- 1 lb broccoli
- 1½ lb potatoes, cut into cubes
Sauce
- 2 tbsp butter
- 1 leek, sliced
- 1 garlic clove, crushed
- 3 tbsp corn starch
- 1½ cups milk
- 1 cup grated cheese
- ½ tsp paprika
- 2 tbsp chopped parsley
- salt & pepper
Preparation
- Preheat oven to 350°F
- Bring a large pot of salted water to a boil, and boil the cauliflower, broccoli and potatoes for 10 minutes. Drain the vegetables after cooking.
- Melt the butter in a large pan
- Add the leek and garlic and cook over low heat for 1 minute
- Stir in the corn starch and cook, stirring constantly for 1 minute
- Remove from heat and gradually stir in the milk, 1/2 cup cheese, and paprika
- Return to heat and bring to a boil, stirring constantly
- Season to taste with salt & pepper
- Place the vegetables in the baking dish, and pour the sauce over the top
- Sprinkle over the remaining cheese
- Cook for 20 minutes, or until the cheese is golden brown and bubbling
- Garnish with chopped parsley
