Basic Cookie Recipe

Version 1
- 1 stick (1/2 cup) butter, melted
- 1 cup date sugar
- 1 large egg
- 1 cup Bob's gluten-free all-purpose flour mix
Preheat the oven to 350 degrees.
Mix the butter and sugar until completely combined. Add the egg and mix well. Stir in the flour and mix until throughly combined.
Roll into tablespoon-sized balls and place onto an ungreased cookie sheet. Bake for 8-10 minutes, then remove and place on a wire rack to cool.
Variations
Orange Cookies
Add the following to the base recipe.
- 1 1/2 tsp orange extract
Molasses Cookies
Add the following to the base recipe.
- 3 tbsp molasses
Chocolate Cookies
Add the following to the base recipe.
- 3/4 cup cocoa powder
- 1 1/2 tsp vanilla extract
- 3 tbsp milk
- 2 tbsp date sugar
Notes
These came out a little harder than I would have liked. Need to find a way to make them flatten out a little more when they are cooking.
Version 2
- 3/4 cup butter (at room temperature)
- 1 1/4 cup coconut sugar
- 1 egg
- 2 cups barley flour
- 1 tsp baking soda
- 2 tsp vanilla
Preheat the oven to 350 degrees.
In a large bowl, mix the butter and sugar, then add the egg and vanilla and mix thoroughly.
Add the barley flour and baking soda, and continue mixing until the mixture forms a dough.
Drop spoonfuls onto an ungreased cookie sheet. Bake for 12-14 minutes until the edges are browned. Remove from the oven and let cool for a few minutes, then transfer to a wire rack lined with paper towels to cool thoroughly.
