Apple Spice Bread (Gluten-Free)

Ingredients

  • 13 oz apples
  • 1 tbsp ground flax seed
  • 4 eggs
  • 3/4 cup almond flour
  • 3/4 cup hazelnut flour
  • 1/2 cup potato starch
  • 1/3 cup date sugar
  • 1/4 cup tapioca flour
  • 1 1/2 tsp xanthan gum
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp cloves
  • ½ tsp allspice
  • 1/4 tsp ground ginger

Directions

  • Chop the apples and blend them in a vitamix blender. It should look like apple sauce
  • Add the ground flax seed to the apples and let sit
  • Mix all the dry ingredients in a bowl
  • After the apples have started to gel up from the flax, mix in the eggs with a fork
  • Combine the dry and wet ingredients
  • Grease a 4x9 bread pan with crisco shortening
  • Bake for 50 minutes at 375°
